A more palatable way of consuming Liver is to make batter out of 100g calf liver, 3 eggs and 2 tbsp of Tallow 1 . Here’s the full recipe.

I’ve found that using Butter can lead to sour-tasting pancakes. Duck fat is better, but Tallow provides superior taste in these pancakes.
